Alex Fochi is an extremely creative and talented chef who we look to for our catering needs. She did a wonderful job preparing all aspects of our food service for our 2012 Chinese New Years’ celebration, and it went off perfectly. She also prepared the meal for our company Christmas party recently, using different teas in each dish she prepared. These included edamame cooked in green tea, a ratatouille sprinkled with jasmine pearl infused safflower oil, ginger-black tea infused rice, salmon poached in osmanthis blossom with an incredible citrus-flavored crème fraiche sauce, pork tenderloin with a rooibos deglazed sauce, and the memorable crème brulee’ that incorporated our Formosa Yancha tea, with its hint of chocolate. And we were previously fans just based on the Brazilian cheese breads! We thank Alex for her attention to detail, professionalism, and great spirit and love of cooking.

Alex Fochi provided the appetizers for our CASA fundraising event at the Caldwell-Snyder art gallery in St. Helena. Her handmade wraps, crostini and sweets were delicious and very classy — a perfect match for our wine tasting and mingling event. Her Brazilian chocolates were outstanding — smooth and creamy — a perfect balance of sweetness and flavor. Our guests raved about them. We sincerely appreciate her participation in our event!

Sal Grosso – Infused Sea Salt. This product of Chefess Alex is Amazing. We sprinke some on our meat shortly before cooking…no need for any other sauce or herbs. We started baking our potatoes on the bar-b-que and in the oven with a little of her sea salt sprinkeld into each foil packet. WONDERFUL taste, no butter needed. We are now drizzling sea salt on Zucchini strips with a drizzle fo Napa Valley’s ATLAS PEAK OLIVE OIL…Yummy. Thanks for lighting up my taste buds!

Napa area business venture of Alexandra Fochi. The number and variety of dishes were bright tasting and imaginatively varied. They ranged from salads and dips to rolled-up sandwiches, grilled sausages and a hanger steak with the simplest of preparations (more on that later).
